Great Gluten- Free Pancakes


  • 1 cup rice flour
  • 3 tablespoons tapioca flour
  • 1/3 cup potato starch
  • 4 tablespoons dry buttermilk powder
  • 1 packet sugar substitute
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon xanthan gum
  • 2 eggs
  • 3 tablespoons canola oil
  • 2 cups water


  1. In a bowl, mix or sift together the rice flour, tapioca flour, potato starch, dry buttermilk powder, sugar substitute, baking powder, baking soda, salt, and xanthan gum. Stir in eggs, water, and oil until well blended and few lumps remain.
  2. Heat a large, well-oiled skillet or griddle over medium high heat. Spoon batter onto skillet and cook until bubbles begin to form. Flip, and continue cooking until golden brown on bottom. Serve immediately with condiments of your choice.

Texas Brisket Rub Recipe

1/2 cup paprika
1/4 cup chili powder
1/4 cup brown sugar
2 tablespoon cumin
2 tablespoon oregano
2 tablespoon salt
1 tablespoon black pepper
1 tablespoon onion powder
2 teaspoon garlic powder
2 teaspoon cayenne pepper
1 teaspoon ground coriander seeds

Combine all of the spices and seasonings well. Store in an airtight container and keep it in a cool, dry location. This recipe makes enough rub for two or three briskets.

To season your brisket, rub a generous amount of the dry rub seasoning onto all sides. Wrap the brisket in plastic wrap and leave it in the fridge for at least 12 hours, and up to two days. The flavors will absorb into the meat during this time.

Garlic and Lemon Marinade for Flank Steak

Ingredients -
⅛ teaspoon Tabasco sauce
2 tablespoons oil
1 clove garlic, crushed
2 tablespoons lemon juice
½ cup Worcestershire sauce
½ cup soy sauce
¾ cup water
Combine all the ingredients and marinate the flank steak for 5 or 6 hours, then grill the steak for 5 to 7 minutes per side or until done.

The Perfect Brownie Recipe

* Do not overbake!
You will need:
3 ounces- unsweetened chocolate
6 Tbsp- butter or margarine ( butter works best in my opinion)
1 1/2 C. Sugar
3- eggs
1/4 tsp.- salt
3/4 C.- flour
3/4 C.- Chopped nuts ( optional)
1 1/2 tsp.- Vanilla Extract
Preheat oven to 350 degrees. Butter a 9 inch square cake pan. Melt chocolate and butter in a medium saucepan. Remove from heat and add the remaining ingredients. Mix well and pour into baking pan. Bake about 40 minutes until dry on the top and almost firm to the touch. Let cool in the pan.
If you would like, you can frost these brownies before removing from the pan.
Chocolate Icing
1 C.- sugar
1/4 C.- milk
1/4 C.- butter
1 square- baking chocolate, cut up
Place ingredients in a medium saucepan. Stir well and bring to a rapid boil. Boil about 2 minutes or until you reach "soft ball" on a candy thermometer. Add 1 tsp. Vanilla extract. Let cool and beat with a spoon. Icing should be thin. Pour and spread over brownies. It takes several hours for the icing to set.

Todays Recipe - Apple Pie

Apple Pie

Pastry for 2 crusts (recipe below)
8 cups sliced, peeled assorted baking apples - about 3 lbs.  (Granny Smith, Cortland, Jonathan)
2 Tablespoons lemon juice
3/4 cup white sugar
1/4 cup brown sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 Tablespoons butter
1 egg yolk
1 Tablespoon milk

1. In a large bowl, toss the sliced apples with lemon juice.
2. Combine sugars, flour, cinnamon and nutmeg; add to apples and toss well to coat.
3. Fill pastry lined 9 inch pie pan with apple mixture. Dot with butter.
4. Place second crust on top of pie filling, cut slits in top of crust to vent. Seal the edges of the crust with a fork or by hand.
5. In a small bowl, beat the egg yolk and milk. Brush mixture over top crust.
6. Bake at 425 degrees for 15 minutes.
7. Reduce heat to 350 degrees and bake 40-45 minutes more or until crust is golden and filling is bubbly.

Flaky Pastry Pie Crust Recipe
Makes two 9-inch pie crusts
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup butter, chilled and diced
1/2 cup ice water

1. Combine the flour and salt in a large bowl.
2. Cut in the butter until the mixture resembles coarse crumbs.
3. Stir in the ice water, a Tablespoon at a time, until the crust mixture forms a ball.
4. Wrap dough in plastic wrap and refrigerate for 4 hours or overnight.
5. Sprinkle flour onto rolling surface. Roll dough out, then divide in half. Roll each half to fit a 9-inch pie plate.
6. Place crust in pie plate, pressing evenly into the bottom and sides.
